Well, that's all right, I was terrified by a passing thought upon seeing this comment that you would rediscover that you were into Spock/Saavik or something. XD; STOP LAUGHING
I can't speak for anyone else but I like genius yet dorky team shenanigans sort of things, which all of the ST canons were good at, and the new movie in particular (as it's TRC-style fanbait). The sex/romansu stuff is pretty secondary. I've read a few old-skool K/S before this like I read everything else but it was never the wave under my boat. There are a lot of "typical"(?) OTP dynamics in this setup, though - stuff that would be exactly up a lot of people's alleys even if not yours. And it is possible to be simultaneously fond of a number of pairings, even conflicting ones. XD
If you want the single biggest reason why neu!ST fic seems to be coming so easily and copiously to so many, though, IMO it's because the ridiculous porn cliche scenarios are all canon and therefore to be considered in-character.
